🥔 Country Ranch Green Beans ‘n Potatoes with Bacon 🥓
Ingredients:
1 lb fresh green beans, trimmed
1 lb baby potatoes, halved
6 slices bacon, chopped
1 small onion, diced
2 cloves garlic, minced
1 packet (1 oz) ranch seasoning mix
½ tsp black pepper
½ tsp smoked paprika (optional)
½ cup chicken broth
2 tbsp unsalted butter
Directions:
Cook the Bacon:
In a large skillet over medium heat, cook bacon until crispy. Remove with a slotted spoon and set aside.
Sauté the Vegetables:
In the same skillet, add onion and garlic to the bacon grease. Sauté for 2 minutes until softened.
Cook the Potatoes & Green Beans:
Add baby potatoes to the skillet. Pour in chicken broth, cover, and simmer for 10 minutes until slightly tender.
Stir in green beans, ranch seasoning, black pepper, and smoked paprika. Cover and cook for 10-12 more minutes until veggies are tender.
Final Touch:
Stir in butter and cooked bacon. Mix well and cook for 2 more minutes.
Serve hot and enjoy!
